Apple Repair Centre and Store not willing to help. How can I get my issue resolved?

Basically, my watch’s activity app and complications like Pedometer don’t update until I restart my watch.
By the way, I’ve got a S4 44mm and I’m in the UK.
I spoke to Apple Support over the phone and they told me that it’s been a known issue in watchOS since last year, and Apple are working on a fix.
Contrary to what the phone person told me, the worker in the Apple Store said that it’s definitely not a known issue, as Apple document all known issues publicly on their website.
So, we sent my watch to the Apple Service Centre, who sent my watch back straight away saying that no issue could be found. This is really annoying, because I’ve spent £400 on a watch that doesn’t do what it’s supposed to do, and the main reason I bought it was to keep track of my fitness (which it won’t let me do).
By the way, my watch completely works again for about a whole day^!!!! when I restart it?
I don’t know what to do now, I haven’t received any follow up at all.
Is there anything I can do now? An email address I can email? Ideally, I’d like a replacement or a refund (my watch is still in warranty). I don’t want to send it back to an Apple repair centre again because they will just dismiss it again?
I can record proof if needed, when my activity stops updating I’ll record it and then show how it changes when I restart my watch.
